Chia Seed Pudding with Blue Spirulina

Ingredients:

  • 2 cups unsweetened milk ( you can use Oat Milk or Almond Milk or any plant-based milk of your choice)
  • 1/4 cup greek yogurt 
  • 1/2 cup chia seeds
  • 1-2 tablespoons maple syrup (or sweetener of choice, adjust to taste)
  • 1 teaspoon vanilla extract
  • 1/2 - 1 teaspoon Gunam Blue Spirulina powder (depending on desired color intensity)
  • 1 scoop vanilla protein powder (optional)

Optional Add-ins:

  • Chocolate chips
  • Berries or Fruit 
  • Rolled oats
  • Coconut flakes (for added texture)
  • Chopped nuts (for a crunchy topping)

Instructions:

  1. Mix the Base: In a mixing bowl, combine milk, greek yogurt, chia seeds, maple syrup, and vanilla extract. Whisk thoroughly to prevent clumping.

  2. Add Spirulina: Add the blue spirulina powder to the mixture. Start with 1/2 teaspoon and add more if you want a deeper blue color. Mix until the color is uniform.

  3. Let It Set: Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight. The chia seeds will expand and absorb the liquid, turning into a thick, gel-like pudding.

  4. Serve: Once set, give the pudding a good stir to ensure the texture is consistent throughout. If the pudding is too thick, you can thin it by stirring in a little extra milk.
